Vegan “Egg” Salad to satisfy your craving. Perfect sandwich for lunch or even a snack! This is our version of the wonderful vegan egg salad sandwich recipe from


  • 1 pound/block of extra-firm tofu
  • 6 tablespoons vegan mayo
  • 2 tablespoons nutritional yeast
  • 2 teaspoons yellow mustard
  • 2 tablespoons chopped red onions
  • 2 tablespoons pickle relish
  • 1/4 teaspoon turmeric
  • Salt & pepper to taste
  • Bread (sliced, baguette, or roll)
  • Lettuce
  • Tomato
  • Cucumber


  1. Press tofu to drain the liquid, and pat it dry.
  2. Crumble the tofu with your hands until it is in small chunks.
  3. Add vegan mayo, yeast, mustard, relish, onions, turmeric, salt and pepper to a large bowl with your tofu crumbles and mix together gently.
  4. Spread the tofu salad onto your bread and top with tomato, lettuce, cucumber, or other accoutrements.
  5. Enjoy!
