Vegan “Egg” Salad to satisfy your craving. Perfect sandwich for lunch or even a snack! This is our version of the wonderful vegan egg salad sandwich recipe from www.itdoesnttastelikechicken.com.

INGREDIENTS
- 1 pound/block of extra-firm tofu
- 6 tablespoons vegan mayo
- 2 tablespoons nutritional yeast
- 2 teaspoons yellow mustard
- 2 tablespoons chopped red onions
- 2 tablespoons pickle relish
- 1/4 teaspoon turmeric
- Salt & pepper to taste
- Bread (sliced, baguette, or roll)
- Lettuce
- Tomato
- Cucumber
INSTRUCTIONS
- Press tofu to drain the liquid, and pat it dry.
- Crumble the tofu with your hands until it is in small chunks.
- Add vegan mayo, yeast, mustard, relish, onions, turmeric, salt and pepper to a large bowl with your tofu crumbles and mix together gently.
- Spread the tofu salad onto your bread and top with tomato, lettuce, cucumber, or other accoutrements.
- Enjoy!
